Today, July 6, is National Fried Chicken Day!  On this day, fried chicken lovers across the country celebrate this American favorite at a nearby restaurant, an outdoor picnic, or at home. For many, the words "fried chicken" conjure up the image of Colonel Sanders, the creator of Kentucky Fried Chicken. His face may be the one you think of, but in actuality Scottish immigrants brought their tradition of deep-frying chicken in fat to the southern United States.  After its introduction to the American South, fried chicken soon became a staple. Seasonings and spices added to the coating mix vary from region to region, and even from cook to cook.


Fried chicken may be a fast food staple, but it's very easy to make at home. You can make your own coating by combining flour, a little bit of starch, and your favorite seasonings. Coat the chicken parts by dipping them in milk or an egg and milk mixture and then rolling them in the flour mixture, or put the chicken pieces in a plastic bag with the flour mix and shaking until fully coated. Fry in oil heated to 300°F until cooked through, then let the chicken rest for about 5-10 minutes, which makes it more tender. Traditionally, lard is used to fry the chicken, but you can use your favorite frying oil instead.
